Potato And Cheese Casserole - cooking recipe

Ingredients
    2 lb. baking potatoes, peeled and diced into 2-inch pieces
    1 clove garlic
    1/2 c. sliced green pepper and onion
    2 Tbsp. butter
    4 oz. cream cheese
    1/2 c. half and half
    3/4 tsp. salt
    1/4 tsp. black pepper
    8 oz. cold Camembert cheese, diced into 1/2-inch pieces
    thyme and parsley (for garnish)
Preparation
    Cook potatoes in boiling salted water for 15 minutes or until done; drain well.
    Saute garlic, green peppers and onions in butter for 2 minutes, until softened.
    Mash potatoes.
    Beat in garlic butter mixture, cream cheese, half and half, salt and pepper.
    Fold in Camembert cheese.
    Place in 1 1/2-quart casserole.
    Bake at 450\u00b0 for 15 minutes or until top begins to lightly brown.
    Garnish with thyme or parsley.
    Serve at once.
