Pumpkin Cheese Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. salt
1 c. chopped nuts
1 c. powdered sugar
8 oz. cream cheese
4 Tbsp. oleo or butter
1 tsp. vanilla
nuts (if desired)
Preparation

Beat the eggs at high speed for 5 minutes.
Beat in the sugar. Stir in the pumpkin and lemon juice.
Sift together dry ingredients and fold into the pumpkin mixture.
Spread on a greased and floured cookie sheet (15 x 10 1/2 x 1/2-inch).
Sprinkle nuts on top.
Bake at 375\u00b0 for 15 minutes.
Turn out on a towel sprinkled with powdered sugar.
Roll as like a jelly roll and cool.
