Baked Eggplant With Ham - cooking recipe
Ingredients

1 lemon
1 c. water
1 eggplant (large)
1/4 c. chopped onion
1 c. cooked ham, diced
2 Tbsp. butter or margarine
1 egg, well beaten
1/2 c. grated cheese (Cheddar)
1/2 c. buttered bread crumbs
1 c. chopped tomatoes or small can Ro-Tel tomatoes
Preparation

Combine lemon juice with water.
Peel eggplant and dice.
Dip in the lemon water.
Rinse again in cold water.
Parboil the diced eggplant about 10 minutes.
Saute onion and ham in butter.
Add eggplant and beaten egg.
Mix well; put mixture in greased 1-quart casserole.
Combine cheese and buttered bread crumbs and sprinkle over top.
Bake at 350\u00b0 for about 40 minutes.
Serves 4.
