1 c. quick-cook grits
1 stick plus 1 Tbsp. butter
1/3 c. scallions, thinly sliced
1/4 tsp. garlic powder
2 1/2 c. shredded Cheddar cheese
1 (10 oz.) can tomatoes with chilies
