Chicken Fricassee - cooking recipe
Ingredients

5 lb. chicken
1/4 lb. butter
2 Tbsp. oil
1 small onion, sliced
2 ribs celery, cut
1 carrot, sliced
1 bay leaf
4 Tbsp. flour
1 c. heavy cream
2 Tbsp. lemon juice
salt and pepper
Preparation

Heat 4 tablespoons butter and the oil in Dutch oven. Brown chicken on all sides.
Pour on boiling water to cover chicken. Add onion, celery, carrot and bay leaf. Cover and simmer 40 to 45 minutes. Strain broth and reduce to 1 1/2 cups.
Melt 4 tablespoons butter. Stir in flour and cook 2 to 3 minutes.
Slowly add cream and broth. Stir and simmer 4 to 5 minutes until smooth and thick. Add lemon juice, salt and pepper to taste.
Spoon sauce over chicken and serve.
