Sofritto - cooking recipe

Ingredients
    2 beef hearts
    1 medium onion, chopped
    4 large cloves garlic
    1 tsp. oregano
    1 Tbsp. Italian parsley
    6 fresh leaves basil
    6 (6 oz.) cans tomato paste
Preparation
    Chop hearts into 1/4-inch cubes.
    Wash cubes in salt water. In 3-quarts of water, boil cubes for 45 minutes.
    Drain cubes and set aside.
