Beet Pickles - cooking recipe
Ingredients

10 c. sugar
7 c. vinegar
beets
red food color (optional)
Preparation

Wash beets.
Cover with water and bring to boil.
Cook until tender and take the skin off.
Pack into jars.
Leave small beets whole and quarter large ones.
Bring sugar and vinegar to a boil and cook until sugar dissolves.
Add food coloring, if desired. Pour over beets and seal.
