Pumpkin Refrigerator Cookies - cooking recipe

1 c. sugar
1 c. margarine or butter, softened
1/2 c. pumpkin
1 egg
2 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. cinnamon or pumpkin pie spice
1 c. finely chopped nuts
Preparation

Mix sugar, margarine, pumpkin and egg.
Stir in remaining ingredients.
Cover and refrigerate at least 2 hours.
Divide dough in half.
Shape each half into roll, about 1 1/2-inches in diameter and about 8-inches long.
Wrap and refrigerate at least 4 hours.
Heat oven to 400\u00b0.
Cut rolls into 1/8-inch slices.
Place 1 inch apart on ungreased cookie sheet.
Bake 7 to 9 minutes; cool.
Makes about 6 dozen cookies.
