Brownies Cockaigne - cooking recipe
Ingredients

1/2 c. butter
4 oz. chocolate, unsweetened
4 eggs, at room temperature
1/2 tsp. salt
2 c. sugar (1 1/2 c. white and 1/2 c. brown)
1 tsp. vanilla
1 c. sifted all-purpose flour
1 c. pecan meats
whipped cream (optional)
Preparation

Preheat oven to 350\u00b0.
Melt butter and chocolate in a double boiler and cool this mixture.
Beat eggs and salt until light in color and foamy in texture.
Add sugar and vanilla gradually and continue beating until well creamed.
With a few swift strokes (manually), combine cooled chocolate mixture into eggs and sugar. Before the mixture becomes uniformly colored, fold in flour (again manually).
Before flour is uniformly colored, gently stir in pecans.
Grease and flour a 9 x 13-inch pan.
Bake for 25 minutes. Cut when cool.
Wrap individually in foil; these keep well for 3 to 4 days.
Good way to serve brownies is to garnish with whipped cream.
