Squash Croquettes - cooking recipe

Ingredients
    2 lb. yellow squash
    1 large onion, grated
    2 c. fine bread crumbs
    2 eggs
    2 tsp. salt
    1 tsp. pepper
    1 c. corn meal
    hot salad oil
Preparation
    Cook squash until tender;
    mash and drain.
    Add remaining ingredients
    except
    corn meal.
    Add more bread crumbs if mixture is too soft to handle.
    Shape mixture into croquettes; roll
    in corn meal and deep fry until golden brown.\tYields 6 servings.
