Ingredients

1 1/2 tsp. extra virgin olive oil
1/2 small green bell pepper, strips
1/2 small red bell pepper, strips
1/4 c. thinly sliced black olives
salt and pepper to taste
2 rounds pita, split 1/2
1/2 c. grated low/no-fat Mozzarella
sweet basil, to taste
Preparation

In heated oil, saute the peppers until soft, but not limp. Remove skillet from the heat and stir in olives, salt, pepper and basil.
Preheat oven to 350\u00b0.
Place the saute on the pita rounds and top with Mozzarella.
Bake on a cookie sheet until the cheese is bubbly and golden in color.
