Olive-Cheese-Zucchini Boats For 2 - cooking recipe

Ingredients
    1 medium zucchini
    1/4 c. water
    1/8 tsp. salt
    1 Tbsp. butter
    1/4 c. soft bread crumbs
    2 Tbsp. chopped stuffed olives
    2 Tbsp. shredded Cheddar cheese
Preparation
    Cut zucchini in half.
    Scoop out and reserve pulp, leaving 1/4-inch shell.
    Chop the pulp.
    Saute in butter 5 minutes.
    Stir in salt, bread crumbs and olives.
    Spoon into shells and sprinkle with Cheddar cheese.
    Put in skillet with a little water.
    Cover and cook for 5 minutes or until heated through and cheese is melted.
