Blue Cheese-Bacon Potatoes(Serves 4) - cooking recipe
Ingredients

4 medium baking potatoes
1/2 c. dairy sour cream
1 oz. Blue cheese, crumbled (1/4 c.)
1/4 c. milk
4 Tbsp. butter
3/4 tsp. salt
dash of pepper
4 slices bacon, crisp cooked, drained and crumbled
Preparation

Rub potatoes with shortening.
Bake at 400\u00b0 for 1 hour. Remove.
Cut slice in top.
Scoop out.
Mash.
Add sour cream, cheese, milk, butter, salt and pepper.
Beat with electric mixer until fluffy.
Spoon back into shells.
Place on baking sheet and return to hot oven for 15 minutes or until heated thoroughly. Sprinkle each with crumbled bacon.
Can freeze.
