Oatmeal-Chocolate Chip Muffins - cooking recipe
Ingredients

1 1/4 c. quick cooking oats
1 1/4 c. milk
1 egg
1/2 c. vegetable oil
3/4 c. semi-sweet chocolate chips
1 c. chopped pecans
1 1/4 c. flour
4 tsp. baking powder
1/2 tsp. salt
3/4 c. packed brown sugar
Preparation

Combine oats and milk and let stand 15 minutes.
Add to oat mixture the egg, oil, 1/2 cup brown sugar and 1/2 cup pecans.
In separate bowl, mix 1 1/4 cups flour, salt and baking powder.
Add flour mixture to oat mixture, stirring until moist.
Fill paper lined muffin tin 2/3 full with batter.
Sprinkle tops with remaining brown sugar and pecans.
Bake at 375\u00b0 for 10 to 15 minutes or until top of muffin springs back when lightly touched. Makes approximately 15 to 20.
