Flounder-Crabmeat Florentine - cooking recipe
Ingredients

2 lb. flounder fillets
1 (10 oz.) pkg. frozen chopped spinach
1 (6 oz.) can crabmeat or 1/2 c. fresh crabmeat
1 c. seasoned bread crumbs
1/2 c. butter or margarine
1/4 tsp. tarragon
Preparation

Arrange flounder fillets in a 9 x 13-inch baking dish.
Cook and drain spinach and spread over flounder.
Sprinkle with tarragon.
Melt butter or margarine and mix with bread crumbs. Flake crabmeat and combine with bread crumb mixture.
Spread over fish and spinach.
Bake at 325\u00b0 for 30 minutes or until fish flakes with a fork.
Serves 4.
