Mountain Spring Salad - cooking recipe

Ingredients
    spinach for 4, washed and dried
    3 scallions, including tops and bottoms
    2 tsp. sugar
    salt to taste
    5 slices country cured bacon
    2 Tbsp. wine vinegar
    croutons (optional)
Preparation
    Toss spinach in salad bowl with scallions.
    Sprinkle on sugar and salt.
    Fry bacon until crisp; drain, but reserve oil.
    Crumble bacon coarsely over lettuce.
    Sprinkle on vinegar.
    Pour hot bacon grease over salad.
    Toss and serve immediately.
    Top with croutons. Serves 4.
