Cream Of Broccoli Soup - cooking recipe

Ingredients
    1 large bunch broccoli
    2 c. chicken broth
    3 Tbsp. butter
    2 Tbsp. flour
    2 c. half and half
    salt
    1/8 tsp. nutmeg
    1/2 c. Cheddar cheese
Preparation
    Cook broccoli in chicken broth until tender.
    Chop into small pieces.
    Drain broccoli and save broth.
    Make paste of 3 tablespoons butter and 2 tablespoons flour.
    Add broth to above paste, stirring until smooth.
    Add chopped broccoli.
    Add half and half, salt to taste, nutmeg and Cheddar cheese.
    Simmer until cheese melts.
    Do not boil!
