Dijon Shrimp Scampi - cooking recipe

Ingredients
    1 lb. large shrimp, cleaned and deveined
    1 clove garlic, minced
    2 Tbsp. margarine
    1/3 c. Dijon mustard
    1/4 c. lemon juice
    1/4 c. chopped parsley
    hot cooked rice (optional)
Preparation
    In large skillet, over medium-high heat, cook and stir shrimp and garlic in margarine until just pink.
    Blend in mustard, lemon juice and parsley; heat through.
    Serve over rice if desired. Serves 4.
