Carrots Of The Ritz - cooking recipe

Ingredients
    3 c. pared and sliced carrots
    12 buttery round crackers, crushed (Ritz type)
    2 Tbsp. minced onion
    2 Tbsp. softened butter
    grated Cheddar cheese
Preparation
    Cook carrots in salted water until almost done.
    Drain and save liquid.
    Coarsely mash carrots, add crushed crackers, onion, butter and 2/3 cup reserved liquid.
    Mix well, place in small buttered baking dish.
    Cover with grated cheese.
    Bake at 400\u00b0 for 15 to 20 minutes.
    Serves 4 to 6.
