Cream Of Broccoli Soup - cooking recipe
Ingredients

4 c. chicken stock
1/2 head broccoli, chopped (or 10 oz. frozen, thawed)
2 Tbsp. chopped onion
1/4 c. unsalted butter
1/4 tsp. thyme
1/2 c. dry white wine
1/4 c. flour
1/4 tsp. white pepper
1 Tbsp. (scant) grated Parmesan cheese
1/2 c. heavy cream
1/4 tsp. nutmeg
Preparation

In large pot, bring chicken stock to boil. In skillet, saute onion in butter; add thyme and wine. Boil 2 to 3 minutes. Add flour, stirring briskly with a whisk. Boil 2 to 3 minutes whisking constantly until smooth. Add 1/2 of the chicken stock. Cook on low for 10 minutes. Add remainder of stock, white pepper, nutmeg, cheese, cream and broccoli. Simmer for 10 more minutes or until broccoli is just done. Serves 6.
