Browned Rice Pilaf - cooking recipe

Ingredients
    1/4 c. uncooked long grain rice
    1 small clove garlic, minced
    1/8 tsp. dried whole oregano
    1/8 tsp. dried whole thyme
    1/8 tsp. salt
    3/4 c. water
    2 Tbsp. diced carrots
    2 Tbsp. diced sweet red pepper
Preparation
    Coat a medium saucepan with cooking spray; place over medium heat until hot.
    Add rice and garlic; saute 3 minutes or until rice is lightly browned, stirring often.
    Add oregano and next three ingredients; stir well.
    Cover, reduce heat and simmer 15 minutes.
    Add carrots and red pepper; toss gently.
    Cover and cook an additional 5 minutes or until liquid is absorbed and rice is tender.
    Yield:
    2 servings.
