Cold Pasta Salad - cooking recipe
Ingredients

1 lb. penne pasta or bowties, etc., cooked
1/4 c. olive oil (extra virgin)
1 small onion, chopped
1 clove garlic, chopped
1 Tbsp. chopped parsley
1 tsp. or less crushed red pepper
4 ripe tomatoes, diced
Preparation

In large frypan, simmer oil, garlic, onion, parsley and red pepper until onion is transparent and garlic lightly browned.
Add diced tomatoes.
Mix all ingredients together.
Meanwhile, cook pasta al dente (12 to 15 minutes).
Drain and rinse with cold water.
Put pasta in serving bowl; pour sauce over pasta.
Add salt and pepper to taste.
Can be served hot or cold.
