Joe'S Medley Of Julienne Veggies - cooking recipe

Ingredients
    3 small (6 to 7-inch) zucchini
    1 small (6 to 7-inch) yellow squash
    1/4 lb. or 1 frozen (10 oz.) pea pods
    1 large sweet red pepper
    1 small green pepper
    1 stem (stalk) celery
    1 large carrot
    salt and pepper to taste
Preparation
    Wash and clean veggies.
    Peel carrot, zucchini and squash. Julienne all veggies (cut lengthwise into 1/4 x 1/4 x 7-inch long strips).
    In a large frying pan, cover bottom with olive oil (I only use virgin olive oil).
    Heat and when hot, add veggies. Stir-fry for about 5 to 8 minutes.
    Cover for a few minutes. Sprinkle with salt and pepper to taste.
    Serve.
    They should be crispy and crunchy.
    A very colorful meal.
    Serves 4.
