Fried Rice - cooking recipe

Ingredients
    3 c. cooked, cold rice (use regular brown or white rice or instant)
    3 green onions, sliced
    2 eggs, beaten
    1 c. frozen peas and carrots, thawed
    1/3 c. chopped, cooked chicken, meat or fish (optional)
    1 pkg. Sun-Bird fried rice seasoning mix
Preparation
    Heat 2 tablespoons oil in skillet.
    Stir-fry rice and green onions.
    Add seasoning mix (I bought at Bi-Lo) and 2 teaspoons soy sauce.
    Stir-fry 1 minute.
    Push rice to side.
    Add eggs and scramble.
    Stir into rice.
    Add peas and carrots and meat (optional) and heat.
    Makes 5 servings, about 1 cup each as prepared.

    0 g, cholesterol 0 mg and 380 mg sodium.
