Mango Nut Bread - cooking recipe

1 3/4 c. sifted flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 c. shortening
2/3 c. sugar
2 eggs
1 c. ripe mango, mashed
1/2 c. chopped nuts
1/2 c. raisins
Preparation

Preheat oven to 350\u00b0. Grease loaf pan. Sift together flour, baking powder, soda and salt; set aside. Cream shortening with sugar; add eggs and beat until fluffy.
Blend in dry ingredients alternately with mangos. Mix until smooth. Add nuts and raisins. Pour into loaf pan. Bake 1 hour or until knife inserted comes out clean. Cool 10 minutes before removing from pan.
