Fried Artichokes - cooking recipe

Ingredients
    12 artichoke hearts
    2 eggs
    6 Tbsp. olive oil
    1 c. bread crumbs
    1 Tbsp. chopped parsley
    salt and pepper to taste
Preparation
    Sprinkle artichoke hearts with salt and pepper.
    Mix parsley with bread crumbs.
    Beat eggs slightly.
    Dip hearts in egg; roll in bread crumbs.
    Fry in hot oil about 3 minutes on each side or until golden brown.
    Serve very hot.
    Serves 6 people.
