Sunlight Carrot Cake - cooking recipe
Ingredients

1 1/2 c. oil
2 c. sugar
3 eggs
2 tsp. vanilla
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1 (7 oz.) pkg. flaked coconut
2 c. shredded carrots
1 (13 1/2 oz.) can crushed pineapple, drained
1 c. chopped nuts
1 c. raisins
Preparation

In a large bowl, combine oil, sugar, eggs and vanilla.
Sift dry ingredients together.
Add to first mixture; mix well.
Stir in coconut, carrots, pineapple and nuts.
Pour into greased and floured pan (13 x 9 x 2-inch).
Bake at 350\u00b0 for 50 to 60 minutes. Cool; frost with cream cheese frosting.
