Ingredients

2 c. water
1/3 c. quick cooking tapioca
3/4 c. sugar
2 1/2 c. canned crushed pineapple
2 Tbsp. lemon juice
Preparation

Boil the water in the top of a double boiler over direct heat. Mix the tapioca and sugar and gradually stir into the boiling water.
When the ingredients are boiling, place them over rapidly boiling water and cook for five minutes, stirring all the time. Remove from the fire and after cooling slightly, fold in the crushed pineapple and lemon juice.
Chill the tapioca before serving.
Other crushed canned fruits, such as apricots or berries may be used in place of the crushed pineapple.
