Ingredients

4 large yellow onions
8 Tbsp. butter
1 Tbsp. flour
6 c. simmering beef broth
salt and pepper to taste
6 slices French bread
3/4 c. grated Swiss cheese
1/4 c. Parmesan cheese, grated
Preparation

Peel onions and slice them thinly.
Separate slices into rings.
Saute onion rings in hot butter in a skillet until softened and then lightly stir in flour.
Add onions to hot broth. Cover saucepan and simmer for twenty minutes.
Taste soup and add salt and pepper to taste.
