Spicy Carrot Bread - cooking recipe

4 c. all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1 3/4 tsp. baking powder
3 eggs, beaten
1 c. sugar
1 c. brown sugar
3/4 c. undiluted evaporated milk
1/4 c. vegetable oil
2/3 c. water
2 tsp. vanilla
1 3/4 c. shredded carrot
1/2 c. chopped nuts (optional)
Preparation

In a large bowl, combine first four dry ingredients.
Beat eggs and mix with the next six ingredients.
Add carrots and mix all together until moistened.
Spoon batter into 2 greased loaf (8 1/2 x 4 1/2 x 2 1/2-inch) pans.
Preheat oven to 325\u00b0 and bake for 60 to 70 minutes.
Insert toothpick until it comes out clean. Cool 10 minutes and remove from pans.
