Barley Mushroom Soup - cooking recipe

Ingredients
    2 tsp. vegetable oil
    1/2 c. chopped onion
    1/2 c. chopped carrot
    1/2 c. thinly sliced celery
    1/2 c. chopped celery leaves
    3 c. sliced mushrooms
    5 c. chicken stock or water
    1/2 c. barley (uncooked, 4 oz.)
    1 tsp. parsley flakes
    1/4 tsp. garlic powder
    salt and pepper to taste
Preparation
    Heat oil in a large soup pot over medium heat.
    Add vegetables. Cook 5 minutes, stirring frequently.
    Add remaining ingredients and bring to boil.
    Cover; reduce heat to low and simmer 1 hour.
    Makes 8 servings (3/4 cup each).
