Chicken Salad Polynesian - cooking recipe
Ingredients

2 c. cooked, diced chicken
1/4 c. chopped onion (optional)
1/4 c. chopped celery
1/2 c. pineapple chunks, fresh or canned
1/2 c. Macadamia nuts, halved
3/4 c. mayonnaise
1 to 2 Tbsp. lemon or lime juice
Preparation

Thin mayonnaise with lemon or lime juice.
Mix thoroughly with first 3 ingredients.
Add pineapple and nuts and toss.
Serve with guava or banana bread.
