Country Cake - cooking recipe

Ingredients
    2 c. sugar
    1 1/2 c. oil
    3 eggs
    2 c. shredded apples, peeled
    3 c. all-purpose flour
    2 tsp. baking soda
    1 tsp. salt
    1 tsp. cinnamon
    1 (12 oz.) pkg. dried, pitted prunes, chopped
    1 c. chopped nuts (I prefer pecans)
Preparation
    In large bowl, beat sugar, oil and eggs at medium speed until smooth, about 2 minutes.
    Blend in apples.
    Combine dry ingredients.
    Add gradually to mixture.
    Stir in prunes and nuts. Spoon into a greased 10-inch tube pan.
    Bake at 325\u00b0 for 1 hour and 20 minutes.
    Check with toothpick.
    Cool about 10 minutes. Invert pan while cooling.
    Use funnel or wire rack.
    Lightly dust cake with confectioners sugar.
