Thumbprints - cooking recipe
Ingredients

1/2 c. low-fat diet margarine
1 tsp. granulated sugar substitute
1 tsp. orange peel, grated
1 3/4 tsp. lemon peel, grated
3/4 tsp. vanilla extract
1 Tbsp. lemon juice
1 Tbsp. orange juice
1 c. flour
1 tsp. salt
1 egg, separated
1/2 c. nuts, chopped
diet jelly
Preparation

Mix together all ingredients except egg white, nuts and jelly. Roll into small balls.
Beat egg white until stiff peaks form. Spread the nuts on waxed paper.
Roll each ball in egg white, then in nuts.
Place on cookie sheet and make a thumbprint in each one. Bake at 350\u00b0 for 12 minutes.
Cool.
When completely cool, fill thumbprint with diet jelly.
Diet jelly (teaspoon = 16 calories). Yield:
4 dozen cookies.
Carbohydrate 2.5 g, protein .6 g, fat l.9 g, calories 29.
One cookie = 1/4 bread exchange, 1/4 fat exchange.
