Miniature Cheesecake Tarts - cooking recipe

Ingredients
    2 (8 oz.) pkg. cream cheese
    3/4 c. sugar
    3 eggs
    1 Tbsp. lemon juice
    1 tsp. vanilla
    vanilla wafers
Preparation
    Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and smooth.
    Line muffin tins with cupcake papers.
    Place one vanilla wafer in the bottom of each cup.
    Fill 2/3 cup full; bake for 15 minutes at 350\u00b0.
    When cool, top with filling of choice (any pie filling; strawberry, cherry, etc.).
    Serves 18 to 20.
