Creamy Yellow Squash Casserole - cooking recipe
Ingredients

2 c. sliced yellow squash
1 can mushroom soup
1 c. sour cream (fat-free)
4 oz. pimentos, drained and sliced or finely cut green peppers
1 c. sliced water chestnuts
2 medium onions
3/4 stick margarine
1/2 pkg. herb stuffing mix
Preparation

Cook and drain squash.
Add soup, sour cream, peppers (or) pimentos, water chestnuts and onions.
Set aside 1/3 of margarine. Melt the other 2/3 margarine and mix with stuffing mix.
Use half stuffing mix to line bottom of 2-quart baking dish, then cover with squash mixture.
Top with rest of stuffing mix and dot with the rest of the margarine that was set aside.
Bake at 350\u00b0 for 30 minutes.
