Vegetable Lasagna - cooking recipe
Ingredients

3 c. sliced zucchini
2 c. sliced mushrooms (8 oz.)
1 c. chopped onions
3 cloves garlic, chopped
1 Tbsp. oil
1 (26 oz.) jar of pasta sauce
1 tsp. oregano
1 (16 oz.) lite or no fat cottage cheese
1 c. grated Parmesan cheese
1/2 to 1 lb. lasagna noodles
2 c. Mozzarella cheese (8 oz.)
Preparation

Cook vegetables and garlic until tender.
Stir in pasta sauce and oregano; simmer 15 minutes.
Combine cottage cheese and Parmesan in a bowl.
In a 13 x 9-inch dish, layer 1/2 each of the noodles, sauce, cottage cheese and Parmesan mixture, plus 1/2 of Mozzarella.
Repeat layering and cover and bake for 45 minutes at 350\u00b0.
Uncover for 15 minutes more.
Let stand 15 minutes.
