Jambalaya - cooking recipe
Ingredients

1 Tbsp. shortening
1 Tbsp. flour
1 c. or more raw duck, chicken or turkey giblets, ground
1 1/2 c. hot water
2 chopped white onions
2 chopped ribs celery
1/2 chopped green pepper
1/2 minced clove of garlic
1 tsp. salt
1/2 tsp. cayenne pepper
3 c. cooked rice
Preparation

Melt shortening in large skillet.
Add flour.
Cook and stir on low heat until dark red-brown.
Add remaining ingredients (except rice).
Cook on low heat for 1 hour.
Combine with rice.
