My Best Minestrone Soup Ever - cooking recipe

Ingredients
    4 tsp. olive oil
    6 slices bacon, chopped
    1 large onion, chopped
    1 bag spinach, pulled apart
    4 Tbsp. tomato paste
    3 1/2 qt. chicken broth
    5 cloves garlic, minced
    2 carrots, peeled and diced
    1 small cabbage, chopped
    2 potatoes, peeled and diced
    3 celery stalks, chopped
    1 large can kidney beans
    1 bunch green onions, chopped
    1/2 tsp. each: salt and pepper
    2 tsp. basil
    1/2 c. Parmesan cheese
Preparation
    Fry bacon just until done; do not burn.
    Heat oil in large pot and saute green onions, bacon, onion, garlic, cabbage, potatoes and celery for 8 minutes, stirring occasionally.
    Add the rest of the ingredients, except cheese; let simmer for 30 minutes, or until vegetables are tender.
    Serve, sprinkled with the Parmesan cheese.
