Sea Soup - cooking recipe
Ingredients

3 1/2 c. regular-strength chicken broth
1 tsp. soy sauce
1/2 c. finely shredded carrot
1/2 tsp. Oriental sesame oil
2 tsp. thinly sliced fresh ginger
1 c. shredded imitation crab
1/3 c. sliced green onion tops
1 or 2 hard-cooked eggs, peeled and sliced (optional)
Preparation

In a 2 to 3-quart pan, mix chicken broth, ginger and soy sauce; bring to a boil over high heat.
Reduce to a simmer; add imitation crab and carrot and simmer, uncovered, until hot, about 1 minute.
Remove from heat and add green onions and sesame oil. Pour into a soup tureen to serve at the table, or ladle into 2 or 4 individual bowls.
Garnish with egg slices.
Makes 2 entree or 4 first-course servings.
