Souse - cooking recipe
Ingredients

5 lb. pigs feet, cut into 1-inch pieces
2 lb. pigs ears, cut into 1/2-inch pieces
2 lb. pigs tails, cut into 1-inch pieces (optional)
1 small jar diced pimientos
3 c. vinegar or more to taste
3 lemons, quartered and seeded
1 c. sweet pickle or more to taste
red pepper, cut up (amount to taste)
salt and pepper to taste
Tabasco sauce to taste
Preparation

Cook the feet with water (to cover), salt, pepper and 1 cup vinegar for approximately 30 minutes.
Then add all other ingredients and cook until all meats are cooked to the degree of doneness desired.
Serves a crowd and is eaten with a fork as the feet will mostly cook off the bones.
This is extremely good served with Hoppin' Jack (black-eyed peas, rice and bacon ends), greens, candied yams, salad and corn bread.
