Slow Cooker Enchiladas - cooking recipe
Ingredients

1 lb. ground beef
1 c. chopped onion
1/2 c. chopped green pepper
1 16 oz. can kidney beans
1 15 oz. can black beans
1 10 oz. can tomatoes with green chilies
1/3 c. water
1 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. salt
1/4 tsp. pepper
1 c. cheddar cheese, cubed
4 oz. monterey jack cheese
5 flour tortillas
Preparation

Brown beef, onion and green pepper. Drain, add the following 8 ingredients and bring to a boil. Reduce heat and simmer for 10 minutes. Combine cheeses. Alternate ground beef mixture, cheese, and tortilla, starting with 3/4 c. of beef in bottom of slow cooker. Cook 5 to 7 hours on low.
