Stir-Fried Peppers With Tomatoes - cooking recipe

Ingredients
    4 green peppers, coarsely chopped
    1/3 c. olive oil
    4 cloves garlic, sliced
    3 large tomatoes, peeled and chopped
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Cook green peppers in olive oil in a large skillet over medium heat, stirring often, 10 minutes or until lightly browned.
    Add garlic.
    Cook 1 minute.
    Stir in tomatoes, salt and pepper. Cook, stirring often, for 15 minutes or until slightly thickened. Yields 4 servings.
