Lemon Meringue Pudding - cooking recipe

Ingredients
    3 eggs
    1 lemon
    1 c. sugar
Preparation
    Beat 3 egg yolks with 1/2 cup sugar until light.
    Then fold in juice and rind of lemon.
    Simmer in double boiler until thick. Beat 3 egg whites stiff; add 1/2 cup sugar.
    Gradually fold egg whites into egg yolk mixture.
    Chill and serve topped with whipped cream or Cool Whip.
