Chicken Vegetable Stir-Fry - cooking recipe

Ingredients
    1 lb. boneless skinned chicken breast
    2 Tbsp. sherry or white wine
    4 c. broccoli florets (1/2 lb.)
    1/4 c. water
    1 Tbsp. cornstarch
    1 Tbsp. oil
    2 Tbsp. soy sauce
    5 c. spinach
    1 c. sliced mushrooms
Preparation
    Cut chicken into bite-sized pieces. Marinate in sherry or white wine for 30 minutes.
    Drain before cooking.
    Steam broccoli 1 1/2 minutes and rinse under cold water.
    Mix together water, cornstarch and soy sauce.
    Saute chicken in oil 2 to 3 minutes. Add cornstarch mixture and vegetables; cook 3 minutes.
    Serve over hot rice.
