Chicken Rice Casserole - cooking recipe

Ingredients
    1 stick butter
    1/2 c. onion, chopped
    1/2 tsp. celery salt
    1/4 tsp. pepper
    1/2 tsp. salt
    1 (4 oz.) can sliced mushrooms
    2 c. rice, cooked
    1 can cream of Mushroom soup
    1 (12 oz.) can evaporated milk
    3 tsp. pimento, chopped
    2 c. chicken breast, cooked (4 breast)
    1/2 c. sharp Cheddar cheese, grated
    1/4 c. Parmesan cheese, grated
Preparation
    Drain mushrooms, saving liquid.
    Melt butter and saute onions.
    Add seasonings, mushroom liquid, and blend in soup. Gradually add milk and stir until smooth and thickened.
    In a large bowl, mix cooked rice, mushrooms, pimento and chicken that has been chopped into small pieces.
    Blend in sauce.
    Pour into lightly buttered casserole.
    Top with 2 cheeses.
    Garnish with whole mushrooms and pimento strips, if desired.
    Bake at 350\u00b0 for 30 minutes or until lightly browned and bubbly.
