Tropical Sweet Potatoes - cooking recipe

Ingredients
    6 medium sweet potatoes
    3 Tbsp. margarine
    3 Tbsp. brown sugar
    1/4 c. egg substitute or 1 egg
    1 Tbsp. orange zest or grated rind
    1 (15 1/2 oz.) can crushed pineapple, drained
Preparation
    Wash and pierce fresh potatoes.
    Place in a microproof 3-quart casserole with 2 tablespoons water.
    Cover and microwave on High for 15 to 17 minutes, or until soft, rearranging once.
    Cool enough to handle.
    Peel and cut into chunks.
    Place potatoes and margarine in a 2-quart casserole.
    Beat with electric mixer or mash until smooth.
    Add remaining ingredients; mix well.
    Spread out evenly in casserole.
    Microwave, uncovered, on High for 10 minutes, stirring once.
