Roasted Winter Vegetables - cooking recipe

Ingredients
    1 Tbsp. butter
    1 1/2 tsp. tarragon
    1/2 tsp. salt
    1/4 tsp. pepper
    1 head broccoli (about 3/4 lb.)
    1/2 head cauliflower
    2 small red onions
Preparation
    Place butter and spices into shallow roasting pan in oven just to melt butter. Cut broccoli and cauliflower into florets.
    Cut onions into wedges. Toss onions in butter, mix and roast, uncovered, 5 minutes. Stir in remaining veggies. Continue roasting until tender.
    Bake at 425\u00b0 for about 25 minutes.
    Other combinations of vegetables are quite yummy.
