Roasted Winter Vegetables(Low-Fat) - cooking recipe
Ingredients

1 Tbsp. butter
1 1/2 tsp. tarragon
1/2 tsp. salt
1/4 tsp. pepper
1 stalk broccoli (about 3/4 lb.)
1/2 head cauliflower (about 3/4 lb.)
2 small red onions
Preparation

Heat oven to 425\u00b0.
Put butter, tarragon, salt and pepper in a shallow roasting pan.
Put pan in oven just long enough to melt butter.
Cut broccoli and cauliflower into florets.
Cut onions into wedges.
Toss onions in butter mixture and roast uncovered, 5 minutes.
Stir in broccoli and cauliflower.
Continue roasting until vegetables are tender, about 25 minutes.
Yields 6 servings.
