Tarragon-Raisin Chicken Salad - cooking recipe

4 boned and skinned chicken breast halves
1/2 tsp. salt
1 small onion
1 small carrot
4 whole peppercorns
2 Tbsp. reduced calorie mayonnaise
2 Tbsp. nonfat yogurt
2 tsp. tarragon
2 Tbsp. golden raisins
Preparation

In a medium saucepan, combine chicken, salt, onion, carrot and peppercorns.
Add water to cover and bring to boil.
Reduce heat and simmer until chicken is cooked through.
Strain broth. (Freeze for future use.)
Cut chicken into large chunks and set aside.
Combine mayonnaise, yogurt, tarragon and raisins.
Add to chicken and mix until chicken is well coated.
Serves 4.
